Two Egg Omelette
- Add two eggs to a bowl and beat them with a fork. Add a little black or white pepper and, optionally, a pinch of sea salt.
- Heat the entire pan, including the base and sides. While the pan is heated on medium/high, add 5 grams of Butter. Butter around the bottom and sides of the pan. Add the eggs, and then immediately move the mixture in a circle with a fork.
- Reduce the heat and only heat half of the pan. Add an omelet to one side of the pan if desired. Flip the cooked egg half over to the uncooked side using a plastic spatula.
- Place the pan over heat for another minute. (Less if you prefer the center soft and runny or more if it is cooked through).
- Serve immediately
