Enjoy the perfect savory dessert with these Cheese Bacon, Chive, and Cheese Scones from Pie Maker. A generous amount of chopped chives, shallots, and Bega grated cheese provide an explosion of delicious flavor that is accompanied by the mild spice from Dijon mustard. Ingredients:
2 cups self-raising flour, extra for kneading
60g cold Western Star Chef’s Choice butter, chopped
1/3 cup chopped chives or shallots
1 cup Bega grated tasty cheese
Salt and pepper
¾ cup milk
Two teaspoons of Dijon mustard
Western Star Spreadable, for greasing and to serve
Three rashers rindless middle bacon, finely chopped
Western Star Spreadable, extra to serve
Method:
- Add flour, butter, chives, and cheese to the food processor. Add spice and salt. Mix until it resembles coarse breadcrumbs. Tip into a large bowl.
- Create a well in the center. Add the milk mixture and Dijon. With a flat-bladed knife, stir until it is incorporated. Utilize your hands to mix into a dough. Place the dough on an area lightly sprayed with flour. Make sure to knead until it is smooth gently. Don’t over-knead. Spread dough out till 2.5cm thick.
- Make use of a 6.5cm circle cutter dusted in flour to cut Scones. Make a ball of dough, knead it lightly, pat dry, and cut additional Scones. Grease the holes of the pie maker using butter. Place scones in the greased holes. Serve with bacon. Close the lid to cook for 10 minutes or until the bacon is puffed and golden.
- Take them out and repeat the process with all remaining bacon and scones. Serving alongside Western Star Spreadable.
