For a healthy breakfast, pop an egg in a large portabella.


4 Portabella Mushrooms, stems removed

Four large eggs

2 tbsp olive oil



Roasted tomatoes and toast to serve


  1. Preheat oven to 180 degrees C with a fan. Line a baking sheet with baking paper. Add the mushrooms to the baking tray and drizzle with olive and pepper oil. Cook for 4-5 mins or until lightly browned. Remove from the oven.
  2. Each mushroom should be stuffed with an egg. Return the mushrooms to the oven and cook for another 10 minutes or until the egg whites have cooked through.
  3. Serve with toast and roasted tomatoes. Season with additional salt and pepper.
