For a healthy breakfast, pop an egg in a large portabella.
4 Portabella Mushrooms, stems removed
Four large eggs
2 tbsp olive oil
Roasted tomatoes and toast to serve
- Preheat oven to 180 degrees C with a fan. Line a baking sheet with baking paper. Add the mushrooms to the baking tray and drizzle with olive and pepper oil. Cook for 4-5 mins or until lightly browned. Remove from the oven.
- Each mushroom should be stuffed with an egg. Return the mushrooms to the oven and cook for another 10 minutes or until the egg whites have cooked through.
- Serve with toast and roasted tomatoes. Season with additional salt and pepper.
