Ingredients:
Wholemeal Plain Flour, 1 1/2 Cups
1 cup plain flour
1/2 cup sultanas
Two teaspoons of baking powder
Two teaspoons of bicarbonate soda
1/2 teaspoon cinnamon
One large egg, lightly beaten
1 1/2 tablespoons vegetable oil
3/4 cup honey
1 cup ripe persimmon pulp, mashed
Method:
- Preheat the oven to 180 degrees C. Grease a muffin pan with 12 holes (1/2 cup capacity).
- Combine all dry ingredients in a large bowl. Combine all the wet ingredients in a small bowl.
- Add wet ingredients with dry ingredients
- Gently fold until combined. Overmixing can result in a hard muffin
- Bake for 15-18 minutes or until tops bounce. Warm or cold, serve.
