The bagel hole is filled with eggs! This easy egg bagel can be made at any time by toasting it on a baking tray.


One large avocado

Four bagels, split and toasted

1/4 cup tomato chutney

200g double-smoked ham

Four eggs

20g baby rocket


  1. Preheat oven to 180 degrees C. Line a large baking sheet with baking paper. Spread avocado on bagel bases. Top with ham and chutney. Place on prepared tray
  2. Place the bagel tops on the tray, and crack the egg carefully into the holes. Position the yolk above the crater. Bake the tray for 15 to 20 minutes or until the egg white sets. Place rocket on ham, then cover with bagel caps.
