ricotta-pancakes
The Breville Bakery Boss (r) Stand Mixer is used to make this recipe. Power and speed make light work of heavy batters and doughs.
Ingredients:
Ricotta Separated three eggs
Two tablespoons caster sugar
200g fresh ricotta
1/2 cup (125ml) milk
3/4 cup (110g) self-raising flour
1 1/2 teaspoons baking powder
Unsalted butter for greasing
Fresh berries to serve
Maple syrup to serve
Method:
Ricotta Pancakes
- Breville Bakery boss(r) Stand mixer is the best choice for best results
- Attach the whisk attachment to your mixer. Add egg whites into mixer bowl. Whip egg whites with the AERATE/WHIP function of your mixer until soft peaks are formed. Add sugar and whisk for 1 minute. Transfer the egg white mixture to another bowl.
- Pour ricotta, milk, and egg yolks into the bowl of your mixer. Mix until well combined using the whisk attachment.
- Reduce speed to KNEAD/FOLD, add the sifted baking powder and flour, and mix until combined. Return the egg white mixture to the mixer bowl, and use KNEAD/FOLD until it is just combined.
- Heat a heavy-bottomed frying pan, griddle or skillet on a low heat. Butter lightly grease the pan.
- Pour about 1/3 cup into the pan and cook until golden on both sides.
- Serve with blueberries and maple sugar.
