easy-fruit-pancakes
This is a great recipe for kids to make pancakes. Make sure you get your parents to help.
Ingredients:
1 cup self-raising flour
1/2 tsp baking powder
1 cup of reduced-fat milk
One egg
40g butter, melted
1 cup canned diced peaches, pears, or apricots, well drained on a paper towel and sliced ripe banana
Icing sugar for dusting
Method:
- In a large bowl, sift the flour and baking soda. Make a hole in the middle. Pour milk and eggs into a jug, then pour it in the middle of the flour mixture. Stir until a smooth batter is formed. Fold in 2 tsp of melted butter into the mix.
- Heat a medium nonstick frying over medium-low heat. Butter the bottom of the pan. Spread 1 1/2 tbs of batter in the pan to make a 10cm-round pancake. Sprinkle chopped fruit or banana slices on top.
- Turn and cook for another 3-4 minutes until cooked through. Continue to cook for 3-4 more minutes. Transfer the fried chicken to a serving plate. Repeat the process, reheating pans and brushing butter on between batches.
- If you wish, add extra fruit or vanilla yogurt.
