smashed-avocado-and-haloumi-fritters

Make these halloumi fried cakes and serve them with avocado mashed. This recipe for a filling brunch or breakfast is a good way to include more vegetables in your meal.

Ingredients:

SalsaOne avocado, diced

One punnet of cherry tomatoes quartered

Two garlic cloves, crushed

¼ bunch coriander

1 cup extra virgin olive oil

1 tbsp. lemon juice

2 tsp. wholegrain mustard

Salt & pepper to taste

FrittersOne large avocado smashed

250g halloumi, grated

Two zucchinis, grated

One onion grates

½ cup corn kernels

¼ cup self-raising flour

2 tsp. lemon rind, grated

Three free-range eggs

¼ bunch fresh coriander, chopped

Olive oil to fry

Sea salt to serve

Method:

Salsa

  1. Mix all ingredients in a large bowl. Set aside

Fritters

  1. Grate the zucchinis, removing as much liquid from them as you can. Add the onion, halloumi cheese, flour, lemon zest, eggs, and coriander to a large bowl. Combine the salt and pepper with the mixture.
  2. Cook the patties in a nonstick pan on medium-high heat for about 1-2 minutes per side. Drain excess oil onto a paper towel.
  3. Place 3-4 patties in a stack and top with smashed avocado salsa.
