This fried egg recipe is a great protein-rich breakfast option. This fried egg dish can be used as a quick and easy dinner in under 10 minutes.
Ingredients:
Eight fried eggs
Four Roma tomatoes, halved
One tablespoon olive oil
Salt and cracked black pepper
Two avocados
One tablespoon finely chopped red onion
One long red chili, seeded and sliced
Wholegrain sourdough toast and ground paprika to serve
Method:
- Preheat oven to 220 degrees C. Place the tomatoes in a lined baking tray and drizzle them with olive oil. Sprinkle salt and pepper. Cook for 15 minutes or until tender. Remove the dish from the oven.
- While the tomatoes bake, place the avocado in a large mixing bowl. Mash the flesh with the red onions, chili peppers, salt, and pepper.
- Spread the spicy avocado mixture on the toasted sourdough. Serve with roasted tomato and fried eggs. If desired, drizzle with extra olive oil.
