waffles-with-sauteed-mushrooms-and-maple-bacon
Create a special breakfast, including bacon, mushrooms, and waffles.
Ingredients:
8 (200g) rashers streaky bacon
1/4 cup maple syrup
One egg separated
1 tbsp caster sugar
3/4 cup (175ml) milk
80g butter, melted
1 cup (140g) self-raising flour
400g Swiss Brown Mushrooms, halved
2 tbsp chives, sliced
Sour cream and chives to serve
Method:
- Bake at 180degC until fan-forced. Prepare a baking tray by covering it with baking parchment.
- Put the bacon into a single layer, then apply maple syrup to it. Bake for at least 20 minutes or till crispy.
- Mix egg yolks as well as milk, 60g melting butter, and flour in a large bowl, and mix to combine. Whisk sugar and egg whites into a bowl to make it light and fluffy, and then gently fold in the flour mixture.
- Heat a waffle maker. Make 1/4 cup of the batter for waffles at a time. Bake for four minutes, or till golden
- The butter can be melted in a large pan of frying over medium-high temperature. Add chives and mushrooms. Sprinkle with the salt and black pepper. Cook, stirring frequently for 5 minutes or so, until the mushrooms are slightly golden.
- Serve waffles on plates. Serve them with Maple Bacon, Mushrooms, Chives, and sour cream.
