1/2 small ripe avocado

1 tsp lemon juice

Two eggs at room temperature

Two slices whole grain bread

Vegemite, for spreading


  1. Half the avocados lengthways, and scoop out the flesh into a bowl. Add lemon juice, and mash the avocado with a fork. Set aside
  2. Stir gently in an anti-clockwise direction while bringing the water to a gentle boil. Simmer for 3-4 minutes for soft-boiled.
  3. Toast the bread, then spread it lightly with vegemite. Top with avocado. Cut the fingers into pieces. Transfer eggs into egg cups. Serve with avocado toast and vegemite.
