French toast is a great breakfast for Mother’s Day or any other special morning.


Four large eggs at room temperature

3/4 cup of reduced-fat milk

1/4 cup caster sugar

1/2 tsp vanilla extract

Butter, for greasing the pan

6-8 slices of day-old thick white bread

Strawberries and blueberries to serve

Icing sugar for dusting


  1. Preheat oven to 120degC/100degC with fan. In a medium-sized shallow dish, whisk together the eggs, milk, and sugar.
  2. Melt butter in a large, non-stick pan over medium heat. Dip two bread slices in the egg mixture and let them sit for 15-20 seconds each.
  3. Add to the pan and cook on each side for 2-3 minutes until golden. Transfer to a baking tray and warm up in the oven. Repeat with the remaining egg mixture, extra butter, and bread.
  4. Place the French toast on serving plates. Serve with blueberries and strawberries, and lightly dust the icing with sugar.
