French toast is a great breakfast for Mother’s Day or any other special morning.
Four large eggs at room temperature
3/4 cup of reduced-fat milk
1/4 cup caster sugar
1/2 tsp vanilla extract
Butter, for greasing the pan
6-8 slices of day-old thick white bread
Strawberries and blueberries to serve
Icing sugar for dusting
- Preheat oven to 120degC/100degC with fan. In a medium-sized shallow dish, whisk together the eggs, milk, and sugar.
- Melt butter in a large, non-stick pan over medium heat. Dip two bread slices in the egg mixture and let them sit for 15-20 seconds each.
- Add to the pan and cook on each side for 2-3 minutes until golden. Transfer to a baking tray and warm up in the oven. Repeat with the remaining egg mixture, extra butter, and bread.
- Place the French toast on serving plates. Serve with blueberries and strawberries, and lightly dust the icing with sugar.
