Ingredients:
4 thin slices pancetta
Four eggs
1/2 tsp salt
50g gruyere cheese, finely grated
Chervil sprigs to serve
Method:
- Preheat oven to 180 degrees C. Line a baking sheet with baking paper. Pancetta should be baked for 10 to 15 minutes or until golden. Cool pancetta on a tray. Set aside the pancetta.
- Separate the eggs, and then place the egg whites in a bowl. Add salt and continue beating until stiff peaks are formed. Beat cornflour until it is combined.
- Pour the egg white on the tray and form nest shapes. Make an indentation at the center. Place yolks in the center of the nests. Cover nests lightly with foil and baking paper.
- Bake for 15 to 20 minutes or until the nests have just begun to set. Serve the eggs with a sprinkle of pancetta, gruyere, and chervil.
