Ingredients:
Vincotto Caramelised Pears5 firm Beurre Bosc pears
30g butter
One tablespoon of brown sugar
Two tablespoons Vincotto
Cinnamon French toastThree eggs, lightly beaten
1/3 cup cream
1/3 cup milk
1/4 teaspoon ground cinnamon
One tablespoon of caster sugar
50g butter
8 x 2cm slices of a quality baguette
Method:
Vincotto Caramelised Pears
- Remove the core from each half of the pear and slice into six wedges.
- Melt the butter in a large frying pan and add the sugar and pear wedges. Cook, stirring frequently, until the pears have caramelized and become colored.
- Continue to reduce the vincotto for 2 minutes.
Cinnamon French toast
- Beat together the cinnamon, sugar, cream, and milk.
- Melt some butter in a large frypan
- Drain excess liquid from the mixture before dipping the bread slices in.
- The bread should be cooked until both sides are golden.
