Ingredients:

Vincotto Caramelised Pears5 firm Beurre Bosc pears

30g butter

One tablespoon of brown sugar

Two tablespoons Vincotto

Cinnamon French toastThree eggs, lightly beaten

1/3 cup cream

1/3 cup milk

1/4 teaspoon ground cinnamon

One tablespoon of caster sugar

50g butter

8 x 2cm slices of a quality baguette

Method:

Vincotto Caramelised Pears

  1. Remove the core from each half of the pear and slice into six wedges.
  2. Melt the butter in a large frying pan and add the sugar and pear wedges. Cook, stirring frequently, until the pears have caramelized and become colored.
  3. Continue to reduce the vincotto for 2 minutes.

Cinnamon French toast

  1. Beat together the cinnamon, sugar, cream, and milk.
  2. Melt some butter in a large frypan
  3. Drain excess liquid from the mixture before dipping the bread slices in.
  4. The bread should be cooked until both sides are golden.
  5. Serve with slices of vincotto caramelized pear, syrup, and a small amount of yogurt.
